The site lists family-style, plated, cocktail reception and chef's tasting as its formats, and the cocktail reception is not priced on the homepage. In each case the company writes a custom menu, does the shopping, cooks in the house, serves, cleans up and brings staff as needed.
The per-person price does not cover everything. Labor is billed separately and a 15% gratuity is added to the bill. Neither the hourly labor rate nor the number of staff for a given guest count is published. For a full wedding those two lines can be a meaningful share of the total, so ask for a complete sample invoice rather than a menu price.
This is a private chef model. Hamptons Heirloom brings the kitchen to a home, which suits a rented Hamptons house, a North Fork rehearsal dinner or a small ceremony in a Nassau backyard. The service map is specific: Nassau from Great Neck to Long Beach, Suffolk from Huntington to Montauk, plus the North Fork and New York City. Menus are seasonal, which on the East End in September means the tomatoes are the point.
A 20% administrative fee, charged on food, staff and beverage totals, is the first number you will find on Art of Eating's FAQ, and the company says plainly that it is not a gratuity.
