The facility fee. Long Island halls add 18–22% on top of the menu price. Watermill and Fox Hollow both publish 22%; Harbor Club calls the same thing a 22% admin fee. It is not a tip — Watermill’s own site states it “is not a gratuity and will not be distributed, in whole or part, to any employee.”
The tax. Nassau is 8.625%. Suffolk went to 8.75% on 1 March 2025 (NYS Tax Dept, ST-25-1) and most Long Island wedding pages still quote the old rate. Tax applies after the facility fee, not before.
The cash. Because the facility fee is not a gratuity, the maitre d’ is tipped separately — $5–$9 per guest, plus $200–$300 for the bridal attendant and $100 a bartender, per the Brides of Long Island tipping guide.
